Masayoshi: Michelin-Starred Omakase on Fraser Street
Masayoshi is chef Masayoshi Baba's intimate omakase restaurant on Fraser Street, and it has held a Michelin star every year since the Vancouver guide launched in 2022. It is one of the hardest reservations in the city, and one of the best places in Metro Vancouver to experience a chef-led sushi meal.
Here's what to know before you book.
About Masayoshi
Chef Baba trained in fugu (pufferfish) preparation in Japan's Yamaguchi and Fukuoka prefectures, then spent about a decade behind the sushi bar at Tojo's in Vancouver before opening his own restaurant.
Masayoshi serves an omakase-only menu. The chef applies Edomae techniques such as curing, marinating and ageing to seasonal fish, much of it from British Columbia waters.
The Menu
How It Works
There is no à la carte menu. You choose between a seat at the sushi bar and a seat in the dining room, and the chef decides the sequence. Recent menus run to roughly 20 courses.
Sushi bar seats give you a direct view of Chef Baba at work. Table guests receive the same progression in a quieter setting.
What to Order
- Seasonal nigiri: the heart of the meal, with fish cured or aged in the Edomae style.
- Composed appetizers: small, hyper-seasonal plates before the sushi.
- Hand roll and miso soup: typical closing courses.
- Tamago: the traditional sweet omelette.
- Sake: a well-chosen list to pair with the meal.
Dietary Needs
Omakase menus are seafood-heavy and set by the chef. Share allergies and restrictions when you book, as some cannot be accommodated.
Atmosphere and Dining Experience
Small, calm and focused on the chef.
- Best for: special occasions and serious sushi lovers
- Noise level: quiet
- Dress code: smart casual
- Good to know: book weeks ahead; cancellation fees apply
