Cambodian (Khmer) cooking balances sour, salty, sweet and bitter flavours. It builds on kroeung, a fragrant paste of lemongrass, galangal, turmeric and makrut lime, and uses prahok, a fermented fish paste. It shares ingredients with Thai and Vietnamese food but tastes distinctly its own.
Metro Vancouver has only a handful of dedicated Cambodian restaurants, so this guide lists just three rather than padding the count. One is a Chinatown institution that has run for four decades. The other two are newer projects from Top Chef Canada winner Chanthy Yen.
